Grocery Day Dinner

It’s nice to think that, after you’ve gotten the week’s grocery haul home and everything is at its freshest, you can go on to cook an amazing dinner that evening. But that’s not always how it plays out. Refrigerated (or frozen) ravioli is one of my favorite convenience foods, and here’s a trick for elevating it without a lot of fuss.

In a microwave-safe dish that will hold your ravioli comfortably once it’s cooked, combine minced fresh garlic (we like lots), chopped sundried tomatoes, and olive oil (if your tomatoes are oil-packed you can use some of that, or add a few tablespoons in addition.) A pinch of dried herbs is a nice touch. Microwave for a few seconds, just to “bloom” the garlic.

Set a big pot of water on to boil, and cook ravioli according to package directions. A gentle boil is best. When it’s done, use a slotted spoon to fish out all the ravioli into your garlic-oil dish. Gently toss the ravioli with the sauce, then grate some Parmesan over the top in several stages, tossing gently in between. Serve with more cheese, and a simple salad or veggie side.
