Hobo Skillet

Perfect for camping (or a cozy evening at home.)

Potatoes and sausage with onions and bell peppers

Ingredients:

  • 2 lbs Yukon gold potatoes (about 4-6 good-sized ones)
  • 4 Tbsp butter
  • 2 red or yellow bell peppers
  • 1 large or 2 small onions
  • 4 fully-cooked smoked chicken or pork sausages – 3 to 4 oz each
  • Salt and pepper

Instructions:

Set cast-iron skillet over low burner to preheat while you slice potatoes: Cut each potato in half lengthwise, then cut 1/2 inch thick slices. Melt butter in skillet and raise heat to medium-high. Add potatoes and 1/2 tsp salt, stirring to coat. Then spread them into a single layer and cover the pan. Cook for 12 minutes, stirring several times to redistribute the potatoes as they begin to brown.

Meanwhile, slice bell peppers and onion into thin strips or wedges. Add to the pan with 1/4 tsp salt and stir into the potatoes. Cover and cook 10 minutes, stirring once or twice.

Meanwhile, slice sausages into bitesize pieces. Stir into the pan, and cook uncovered, stirring occasionally, until everything is done and liquid has evaporated. Season to taste with salt and pepper.

Serve with green salad, fruit, or to really go “hobo” to the max, baked beans.
