Shortcut Baked Beans

Well, just opening a can of Bush’s would be even shorter. But these are definitely superior, and ready in time for dinner.

Adapted from Martha Stewart Everyday Food

  • 2 slices bacon, snipped into small pieces
  • 1 small onion, chopped fine
  • 1/4 cup ketchup
  • 2 T molasses
  • 1 Tbsp maple syrup
  • 1 tsp mustard powder
  • 2 14.5 oz cans pinto beans, drained but not rinsed
  • 1-2 tsp apple cider vinegar
  • Salt and pepper to taste

Preheat oven to 325.
In a deep 2-qt oven-safe glass dish, microwave bacon for 3 minutes or until some fat is rendered. Add onions and sprinkle on a pinch of baking soda so they will soften quickly. (Be aware, they will turn bright yellow.) Microwave at 3-minute intervals, stirring after each, until onions are soft. Stir in ketchup, molasses, maple syrup, and mustard powder. Then stir in beans. Microwave another 3-5 minutes, then bake at 325 for 30-45 minutes or until thickened and heated through. Stir in vinegar, and salt and pepper to taste.
